- Biryani — Fragrant spiced rice with meat, Mombasa’s signature dish
- Coconut Fish Curry — Fresh catch in creamy coconut sauce with turmeric and tamarind
- Pilau — Spiced rice with whole spices (cardamom, cloves, cinnamon)
- Mahamri — Sweet coconut doughnuts, a Swahili breakfast staple
- Kachumbari — Fresh tomato and onion salad with coriander and lime

The Experience
9:00 AM — Market Visit: Walk through a local market with your chef guide. Learn to identify spices by sight and smell, select the freshest fish, and pick coconuts for fresh cream.
10:00 AM — Cooking Session: In a traditional Swahili kitchen, learn hands-on techniques: grinding spices with a kinu (mortar and pestle), cracking and grating coconuts, marinating with tamarind, and slow-cooking with charcoal.
12:30 PM — Feast: Sit down and enjoy the meal you’ve prepared, served on a traditional Swahili tray (sinia) with fresh juices.
